Spartico, who recently opened Frank's Catering and Baked Goods, 283 Greenbank Rd., had at one time worked out of the basement of his home. His butter tarts were customary and he was casting about for a new product to add to his tart lineup when he ran across the recipe for buttermilk pie on a cooking show about the American South.
"I tenderness I could work with it," says Spartico, who played with the recipe -- which remains a closely-wary secret -- for about a week before he was satisfied with the texture and drop.
Spartico's buttermilk pie never made it to tart form. He has been selling the custardy confections as pies for about two years at the North Gower farmers' make available on Saturdays and more recently, at his new store.
"It's one of my best-selling pies," he says, but admits that some people find it too mellow. "It's one of those pies you either love or you don't."
All of Spartico's pies are priced at $7.95. He has been working with buttermilk custard and his lineup now includes a peach pie with a buttermilk custard and a buttermilk-blueberry pie.
